As part of ‘Irish Culture Week’ in school Home Economics students looked at the importance of the potato in Irish cooking and the impact the famine had on this important staple food in Ireland. Students cooked their own potato bread and colcannon. They also investigated and tasted local boxty types- boiled and loaf boxty.
